Capic cooking tunnel technology
With dry heat (up to 250°C) produced by electric heating elements, steam from a remote boiler or a combination of the two, its versatility means it can be used for a wide range of cooking applications.
Homogeneous cooking
Even baking is achieved using forced-air technology, with a fan unit positioned at the end of each module. The 600 mm wide stainless steel mesh conveyor is driven by a geared motor controlled by a variable speed drive to perfectly adjust the baking time.
Energy performance
The modular design means that the heating zones can be selected to best match the energy output to the desired production capacity. It also allows independent management of cooking temperatures according to the recipes set, to optimise heat production. Heat loss is limited by the high-performance insulation of the doors and walls of the modules.
Suitable for a wide variety of products
To adapt to all kinds of products such as ready meals, meat, fish, vegetables, desserts, etc. Several recipes can be configured with the desired cooking mode, the temperature in each of the modules and the speed of the conveyor.
Easy cleaning & maintenance
To facilitate cleaning and maintenance operations, each module has two hinged side doors giving full access to the work area.
